Maritnated anchovies are one of the most typical appetisers of Italian fish-based cuisine, especially of the Campania region. Simple, but very savoury at the same time, in the past they symbolised one of the dishes of the so-called “cucina povera” (literally “poor cooking”) of Southern Italy, because they were a typical dish for fishermen as it was really easy for them to find the ingredients to prepare it.
